THE LOVE BIRD
ROAST CORNISH GAME HEN WITH PAN JUICES

Chop roughly and place in roasting pan to create a "rock" on which to roast
the bird:
            3 oz. Onion
            2 oz. Celery
            2 oz. Carrots
            1 Clove Garlic
            4 oz. Potatoes
 
Stuff cavity of hen, rub outside with Olive Oil and roast on vegetable
"rock" at 375º for 45 minutes.
 
Remove, cool to room temperature and split.
 
Strain broth from pan, reduce and finish with:
            1 ­ 2 oz. cold Butter
            Chopped Fresh Basil and Parsley
 
Serve with roasted vegetables and sauce.
 
Recommended wine: A rich Chardonnay or a light Merlot
